Refreshing Tomato Cucumber Salad

There’s something about a fresh, crisp salad that just screams summertime, don’t you think? And when it comes to summer salads, one of my all-time favorites is a classic Tomato Cucumber Salad. It’s simple, it’s refreshing, and it’s bursting with flavor. Plus, it’s a breeze to put together, which is always a win in my book.

Let’s break it down. First up, we’ve got the star of the show: tomatoes. Now, I don’t know about you, but there’s nothing quite like biting into a juicy, ripe tomato on a hot summer day. For this salad, we’re using 2-3 large tomatoes, diced up into bite-sized pieces. Trust me, the freshness of these tomatoes is going to take this salad to the next level.

Next, we’ve got the cucumbers. Specifically, a long English cucumber that’s been sliced up nice and thin. I love using English cucumbers because they’re super crisp and have a really nice crunch to them. Plus, they’re not too watery, which means they won’t make your salad soggy. Another win!

Now, let’s talk about flavor. We’re going to add a bit of bite to our salad with some thinly sliced red onion. I know raw onion can be a bit polarizing, but trust me, it really works in this salad. It adds a nice pop of color and a bit of sharpness that complements the sweetness of the tomatoes and cucumbers perfectly.

Of course, no salad would be complete without some fresh herbs. I like to use a mix of parsley and basil but feel free to use whatever herbs you have on hand. Not only do they add a burst of flavor, but they also make the salad look extra pretty.

To bring it all together, we’re going to whip up a simple dressing using olive oil and red wine vinegar. It’s light, it’s tangy, and it really lets the flavors of the vegetables shine. Just drizzle it over the salad, give everything a good toss, and voila! You’ve got yourself one heck of a delicious salad.

Now, here’s a little tip: let your salad chill in the fridge for at least 20 minutes before serving. This gives the flavors a chance to meld together and really intensify. Trust me, it’s worth the wait.

So there you have it, folks. A simple yet oh-so-delicious Tomato Cucumber Salad that’s perfect for those hot summer days. Whether you’re hosting a backyard barbecue or just looking for a light and refreshing side dish, this salad is sure to be a hit. Give it a try and let me know what you think!
