Ingredients
1 tablespoon sesame oil
400 grams mini portabella mushrooms, finely chopped
1 lb ground chicken
1 medium onion, diced
1 cup matchstick carrots
1 can water chestnuts, finely chopped
4 green onions, sliced
1 head Boston leaf lettuce
Pinch of salt and pepper
- Sauce
1/4 cup soy sauce
1 tablespoon sesame oil
1 tablespoon honey
4 cloves garlic, minced
1 tablespoon fresh grated ginger
1 teaspoon sriracha sauce
Directions
- Mix all of sauce ingredients together and set aside.
- Add 1 tablespoon sesame oil to hot wok or large frying pan (medium high heat) and saute mushrooms 2 minutes. Add ground chicken with a pinch of salt and pepper. Cook for an additional 3 minutes or until no longer pink. Add onion, carrots and water chestnuts. Cook for 5-7 minutes until veggies are softened.
- Add sauce ingredients with green onions. Mix together well and cook for 1 minute more stirring to combine flavours. Remove from heat and let cool for a few minutes
- Place chicken mixture in lettuce leaves and serve.
