- Dry Ingredients
1 1/2 cups of flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup white sugar
- Wet Ingredients
1 egg, slightly beaten
1 1/4 cup milk
1/4 cup butter, melted and cooled
1/2 teaspoon vanilla
Directions
- In large bowl, combine all dry ingredients well.
- In small bowl, combine the wet ingredients with a whisk.
- Add wet to dry ingredients and stir with wooden spoon until well combined but still has some small lumps in it. Do not over stir or pancakes will not be light and fluffy.
- Heat griddle or heavy frying pan to medium low. Lightly grease with a small amount of butter.
- Using 1/3 cup measure, pour onto griddle or in frying pan. When edges are dry and bubbles start to form on top (2-3 minutes) they are ready to flip.
- Keep ready pancakes warm in a warm oven and continue with the remaining batter.
- Serve with butter and maple syrup.
