Sausage Potato Skillet

minutesDelicious and easy one-pan sausage and potato skillet with smoked sausage, potatoes, peppers, and onions. Perfect for a quick, flavorful weeknight dinner!
Ingredients
1 lb smoked flavourful sausage
4 – 5 medium potatoes, peeled and diced into 1/2 inch cubes
1 medium onion, chopped
3 cloves garlic, minced
2 bell peppers, diced in large pieces (different colours)
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1 teaspoon thyme
1/2 cup beef broth (water works as well)
1/4 cup chopped parsley
Directions
- Slice sausage into rounds 1/4 inch thick. (Halves or quarters depending on size of sausage being used). Saute in oiled nonstick frying pan over medium heat until nicely browned. (4-5 minutes). Remove sausage from pan and set aside.
- Add potatoes, onion, peppers and garlic and fry for 3 minutes. Add chicken broth, salt, pepper, paprika and thyme. Stir well.
- Once liquid starts to boil, reduce heat to med/low, cover skillet and cook for 10 minutes. Using a spatula, flip the potatoes and peppers once or twice to ensure they are not sticking.
- Add sausage to pan and increase temp to med/high. Cook for 10 minutes longer or until potatoes are tender. Continue to flip so potatoes can crisp up. Don’t stir or the potatoes will fall apart.
- Garnish with chopped parsley if desired.
