Ingredients

  • 3-4 lb chicken, cut up (debone breast and thigh if desired)

  • 1 tablespoons olive oil

  • 1 tablespoon butter

  • 2 large carrots, peeled and sliced in 1/2 inch pieces

  • 1 medium onion, sliced in wedges

  • 4 cloves garlic, minced

  • 3 tablespoons flour

  • 2 cups green beans, chopped

  • 1 cup white wine

  • 2 1/2 cup chicken broth

  • 1 – 1 1/2 lbs new potatoes, cubed (leave skin on)

  • Sprig each of fresh rosemary and thyme (1/2 teaspoon each if dried)

  • 2 bay leaves

Directions

  • Preheat oven to 350 degrees
  • Season chicken with salt and pepper, Brown chicken in batches in dutch oven over medium high heat in olive oil and butter. Remove to plate and set aside.
  • Saute onion and garlic in drippings for 3 minutes. Add 3 tablespoons of flour and stir to combine. Cook for additional minute.
  • Slowly add wine and broth, scraping up an brownings. Turn heat down to medium low.
  • Add potatoes, carrots and beans, mix well. Add rosemary, thyme and bay leaves.
  • Layer chicken on top and bring to a simmer. Cover and bake for 45 minutes, uncover and bake for an additional 40 minutes.
  • Serve in bowls with fresh bread to soak up those wonderful juices.
