Ingredients
1/2 cup onion, finely diced
1/2 ham, finely diced
4 eggs
Salt and Pepper
8 slices bread, toasted
1 tablespoons margarine
Directions
- In large nonstick frying pan, melt margarine over medium heat.
- In a small bowl beat one egg, add 1 good tablespoon each of the diced ham and onion. Add salt and pepper.
- Add mixture to frying pan. Repeat process with additional eggs. Add more margarine if required.
- Once the top of each egg Pattie is partially set, flip over and fry other side until completely cooked and lightly browned.
- Toast and butter bread, place one of the fried egg patties on 4 of the slices. Top with additional toast.
