Slow Cooker Chicken Stew

Ingredients
2 tablespoons olive oil
1 1/2 – 2 lbs boneless, skinless chicken thighs, cut into 1 inch cubes
3 tablespoon flour
1 teaspoon thyme, 2 sprigs fresh
1 teaspoon rosemary, 2 teaspoons fresh
1 teaspoon salt
6 cloves crushed roasted garlic
1 onion, diced
2 large carrots, peeled and sliced
1 1/2 pounds potatoes, peeled and cut into cubes
3 cups chicken broth, homemade is best but not necessary
2 bay leaves
1/2 cup milk
1/2 cup green peas, frozen or fresh
Salt and pepper to taste
Directions
- Season chicken cubes with salt and pepper. Sear chicken in large skillet in olive oil for 4 to 5 minutes. Remove and put in slow cooker.
- To slow cooker, add flour, thyme, rosemary and salt. Stir until chicken is well coated with flour and herbs.
- Add onion, carrots, potatoes, garlic and broth. Stir once again to combine well. Add bay leaves.
- Cover and cook on low for 7 hours or on high for 3 – 4 hours.
- Add frozen peas and milk and continue to cook for an additional 15 minutes on high. Once done adjust seasoning if needed an add more flour if too thin or chicken broth if too thick.
- Delicious served with my artisan bread or southern biscuits.
