Quick Spicy Pork with Udon Noodles

Ingredients
- Marinade
2 teaspoons Chili Garlic Sauce
1 tablespoon rice wine vinegar
1/2 cup soy sauce
2 teaspoons sesame oil
1/4 cup brown sugar
3 cloves garlic, minced
1 teaspoon ginger paste
- Stir Fry Ingredients
1 lb pork tenderloin, sliced
1 tablespoon vegetable oil
1 cup matchstick carrots
1 red pepper, cored, seeded and cut in match strip slices
2 whole green onions, sliced
3 cups baby spinach leaves
15 oz fresh or frozen (defrosted) udon noodles
Chopped peanuts for garnish if desired
Directions
- In medium bowl combine marinade ingredients. Add pork and stir to cover. Set aside while you prepare the vegetables. (I have done this step in the morning and let the pork marinade for the day in the fridge)
- Heat wok over medium high heat and add oil. Remove pork from marinade (reserve the remainder) and add to hot wok. Stir fry until cooked through. Remove to bowl.
- Add carrots to wok with 1 tablespoon of water and stir fry for about 2 minutes. Add onion and red pepper, continue to cook for 1 minute. Add green onion, stir and return pork to wok.
- Pour in reserved marinade and bring to a boil. Boil for a full minute or two. Add udon noodles to wok and continuously tossing for an additional 3 – 4 minutes or until noodles are heated and well coated with the sauce.
- Remove from heat and add spinach. Cover wok briefly until spinach has wilted. Toss spinach into stir fry. Garnish with peanuts if desired. Serve and enjoy!
