Experience the taste of Spain with our authentic Spanish Paella! Packed with saffron-infused rice, seafood, chicken, and veggies, it’s a burst of flavor in every bite.

Ingredients

  • 2 tablespoon olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 small red pepper, diced

  • 1/2 lb (8oz) smoked chorizo sausage, sliced

  • 6 boneless, skinless chicken thighs, cut in 1″ cubes

  • 1 1/2 cup Arborio rice

  • 5 cups chicken broth

  • 1/2 cup white wine

  • 1/2 teaspoon thyme

  • 1 pinch saffron

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • 2 cups cherry tomatoes, halved

  • 1/2 cup frozen peas

  • 12 large shrimp, peeled and deveined

  • Italian Parsley

  • Lemon wedges

Directions

  • Heat 1 tablespoon olive oil in paella pan or 12″ skillet over medium heat. Season chicken with salt and pepper and add to the heated pan. Cook for 5 to 6 minutes. Remove chicken from pan and set aside.
  • Add additional tablespoon of olive oil to pan (do not wipe out to keep the flavours) and cook onion, garlic, red pepper and paprika for about 5 minutes. Add the sausage, rice and return the chicken to the pan. cook for 2 to 3 minutes.
  • Stir in 3 1/2 cups of broth, wine, thyme and saffron. Season with salt and pepper to taste. Bring to a boil, reduce to simmer and cook for 15 minutes, stirring OCCASIONALLY (do not stir constantly or you will have the consistency of risotto)
  • Taste rice to see if it is cooked. If not stir in an additional 1/2 cup broth. Continue cook, stirring occasionally add ing more stock if necessary using up to 5 cups total.
  • When rice is done, stir in tomatoes and peas, cook for 2 minutes (do not stir). Place shrimp on top and cover with foil or lid and leave for 5 minutes. (this will also form an bit of a crunchy bottom crust on the rice which is delicious)
  • Remove foil and garnish with parsley and lemon wedges.
