Ingredients

  • 2 large chicken breasts

  • 3 large sweet peppers, assorted colours

  • 1 large red onion

  • 2 tablespoons olive oil, divided

  • 1 tablespoons fajita seasoning

  • 1 cup shredded cheddar cheese

  • 1 pkg tortillas 10″

Directions

  • Slice chicken breasts into thin strips.
  • Cut sweet peppers and red onion into thick slices.
  • Heat non-stick frying pan over medium heat and add 1 tablespoon of olive oil and stir fry chicken strips with 1 tablespoon fajita seasoning until cooked through. Set aside
  • Add additional tablespoon of olive oil if needed and stir fry peppers and onion with 1 tablespoon fajita seasoning until tender crisp.
  • Add chicken back to frying pan and stir to combine.
  • Lay 4 tortillas flat on surface. Divide topping evenly on half of each tortilla. Sprinkle with a 1/4 cup of cheese on each. Fold in half.
  • Cook on lightly greased griddle for 3 – 5 minutes per side to crisp up. Cut in half and serve with your favourite toppings (sour cream, salsa, hot peppers, etc)
