2 large chicken breasts
3 large sweet peppers, assorted colours
1 large red onion
2 tablespoons olive oil, divided
1 tablespoons fajita seasoning
1 cup shredded cheddar cheese
1 pkg tortillas 10″
Directions
- Slice chicken breasts into thin strips.
- Cut sweet peppers and red onion into thick slices.
- Heat non-stick frying pan over medium heat and add 1 tablespoon of olive oil and stir fry chicken strips with 1 tablespoon fajita seasoning until cooked through. Set aside
- Add additional tablespoon of olive oil if needed and stir fry peppers and onion with 1 tablespoon fajita seasoning until tender crisp.
- Add chicken back to frying pan and stir to combine.
- Lay 4 tortillas flat on surface. Divide topping evenly on half of each tortilla. Sprinkle with a 1/4 cup of cheese on each. Fold in half.
